1Carefully crack open the fresh coconut and drain any coconut water. Reserve the coconut water if desired for another use.
2Using a sturdy spoon or knife, scoop out the white fresh coconut meat from the coconut shell.
3In a small saucepan, combine the rock sugar and 100 grams of water. Add the sliced ginger. Heat gently over low heat, stirring until the rock sugar is fully dissolved. Remove from heat and let the ginger infuse as it cools. Strain out the ginger slices once cooled.
