1Slice the Pork belly into thin, bite-sized pieces. In a bowl, combine the sliced Pork belly with 10g Light soy sauce, 5g Shaoxing wine, Cornstarch, and White pepper. Mix well and marinate for 15 minutes.
2Rinse the Sour bamboo shoots thoroughly under cold water, then drain well and slice them thinly.
3Prepare the aromatics: mince the Garlic, slice the Ginger, and slice the Scallions, separating the white and green parts.
