1Rinse the Azuki beans thoroughly. Place them in a large bowl and add Water for soaking, ensuring the beans are fully submerged. Soak overnight for at least 8 hours.
2Drain the soaked Azuki beans. Transfer them to a pot, add 600g Water, and bring to a boil over medium-high heat. Boil for 5 minutes, then drain the water.
3Return the Azuki beans to the pot with another 600g Water. Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the beans are very soft and easily mashed. Add more water if necessary to keep the beans submerged.
