1Boil the Potatoes until tender, then peel and mash them thoroughly. Set aside.
2Heat 15g of Oil in a small pan for the vada tempering. Add Mustard seeds and Cumin seeds, let them splutter. Add Curry leaves, Asafoetida, Ginger-garlic paste, and Green chili. Sauté for 30 seconds.
3Add the tempered mixture to the mashed Potatoes. Add 5g of Turmeric powder and 5g of Salt, along with Fresh cilantro. Mix everything well to form the potato filling.
