1Wash and hull the Strawberries. Slice them into smaller pieces and place them in a bowl with 50 grams of the Granulated sugar. Let the Strawberries macerate for at least 30 minutes to release their juices.
2While the Strawberries are macerating, prepare a simple syrup. In a small saucepan, combine the Water and the remaining 150 grams of Granulated sugar. Heat gently, stirring until the Granulated sugar is completely dissolved. Remove from heat and let the simple syrup cool completely.
3Once macerated, transfer the Strawberries and their juices to a blender or food processor. Puree until smooth. Pass the strawberry puree through a fine-mesh sieve to remove any seeds, pressing down to extract all liquid.
