1Wash 1000 grams of short-grain rice thoroughly under running water until the water runs clear.
2Soak the washed short-grain rice in 1500 grams of water for a minimum of 4 hours.
3Drain the soaked short-grain rice completely and steam it in a steamer until it is partially cooked and firm, but not fully soft or mushy. This usually takes about 20-25 minutes.
