1Slice the Pork loin into thin shreds. In a bowl, combine the shredded Pork loin with 15 grams of Light soy sauce, 15 grams of Shaoxing wine, Cornstarch, and White pepper. Mix well and let marinate for 15 minutes.
2Shred the Cabbage and Carrot into thin strips. Finely mince the Garlic and Ginger. Slice the Scallions into 5 cm lengths, separating the white and green parts.
3In a small bowl, prepare the stir-fry sauce by combining the remaining 30 grams of Light soy sauce, 15 grams of Shaoxing wine, Dark soy sauce, Chinkiang vinegar, Granulated sugar, and Sesame oil. Mix until the sugar dissolves.
