1Soak Dried Shiitake Mushrooms in 200g hot water for at least 20 minutes until softened. Squeeze out excess water, remove and discard stems, then thinly slice the mushroom caps. Reserve 50g of the mushroom soaking liquid.
2Place Glass Noodles in a large bowl, cover with hot water, and soak for 10-15 minutes until softened but still firm to the bite. Drain well and snip with kitchen shears to shorten if desired.
3Thinly slice Carrot into matchsticks. Thinly slice Napa Cabbage. Finely mince Garlic and Ginger. Slice Scallions, separating the white and green parts.
