Cut Pork belly into 3-4 cm cubes.

Place Pork belly in a pot of cold water, bring to a boil over high heat, and blanch for 5 minutes. Skim any foam that rises to the surface. Drain the blanched Pork belly and rinse thoroughly under cold water.
