1Rinse the Pork spare ribs thoroughly. Place the Pork spare ribs in a pot of cold Water, bring to a boil, and blanch for 5 minutes. Skim off any foam and impurities, then drain the Pork spare ribs and rinse under cold running Water to remove any remaining scum.
2Wash the Old cucumber, do not peel. Cut the Old cucumber lengthwise, scoop out the seeds and pith, then cut the Old cucumber into large chunks approximately 5 cm in size.
3Rinse the Dried scallops and Dried red dates. Soak the Dried scallops in a small bowl of warm Water for 20 minutes until softened, reserving the soaking liquid. Rinse the Candied dates.
