11. In a large bowl, combine the soy sauce, sugar, sesame oil, minced garlic, minced ginger, and black pepper to create the marinade.
22. Add the thinly sliced beef sirloin to the marinade. Mix well to ensure all the beef sirloin is coated. Marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
33. While the beef sirloin is marinating, prepare the vegetables. Slice the shiitake mushrooms, trim the root ends of the enoki mushrooms, and tear the oyster mushrooms into bite-sized pieces. Thinly slice the onion and julienne the carrot. Cut the green onions into 5cm lengths and the napa cabbage into bite-sized pieces.
