1Soak 250 grams of dried apricots in 500 grams of water overnight or for at least 8 hours until they are very soft and plump.
2Carefully drain the dried apricots, reserving the soaking water. Deseed the apricots, keeping the seeds aside.
3Crack open the apricot seeds to extract the kernels. Blanch these apricot kernels in hot water for 2-3 minutes, then peel off their skins. Chop the peeled apricot kernels finely and set aside.
