1In a medium bowl, gently beat the Eggs until the whites and yolks are just combined, being careful not to incorporate too much air.
2Add the Dashi stock, Koikuchi soy sauce, Mirin, and Salt to the beaten Eggs. Whisk lightly to combine.
3Heat a non-stick frying pan (preferably 20-24 cm) over medium heat. Add the Vegetable oil and swirl to coat the pan evenly.
