1Thoroughly clean the Beef small intestines: first, rinse under cold water. Then, rub vigorously with Wheat flour and Coarse sea salt to remove impurities and odor. Rinse again thoroughly. Repeat this process 2-3 times until the water runs clear and the Beef small intestines are clean. Cut the cleaned Beef small intestines into 5cm pieces.
2In a large pot, bring water to a boil. Add the cleaned Beef small intestines and 20g of Soju. Blanch for 5-7 minutes, then drain and rinse with cold water. This helps to further tenderize and remove any remaining strong odor.
3Prepare the vegetables: Slice the Onion thinly. Julienne the Carrot. Cut the Green onion into 5cm lengths. Roughly chop the Perilla leaves.
