1Wash, peel, and roughly chop the Carrots, Yellow onion, Celery stalk, and Potatoes.
2In a large pot, heat the Extra-virgin olive oil over medium heat. Add the chopped Yellow onion and Celery stalk and sauté gently until softened, about 5-7 minutes, creating a soffritto base.
3Add the chopped Carrots and Potatoes to the pot. Stir well to coat them with the soffritto.
