1Thoroughly clean the Silkie chicken, removing any internal organs and excess fat. You may cut the Silkie chicken into smaller pieces if desired.
2Place the cleaned Silkie chicken in a large pot and cover with cold water. Add 15 grams of Ginger slices and the Shaoxing wine.
3Bring the water to a rolling boil over high heat. Skim off any foam or impurities that rise to the surface. Continue to boil for 5 minutes to blanch the Silkie chicken.
