1Bring a large pot of water to a rolling boil. Add the E-fu noodles and cook for 2-3 minutes until softened but still firm. Drain the E-fu noodles well and rinse under cold water to prevent sticking, then set aside.
2Prepare aromatics: Slice the ginger thinly. Separate the white parts of scallions from the green parts of scallions. Mince the garlic.
3Heat a wok or large frying pan over high heat until smoking. Add vegetable oil.
