1Rinse the beef eye thoroughly under cold water. Trim any excess fat or membranes if desired, though traditionally it is cooked with most of its natural components.
2Place the beef eye in a large pot or Dutch oven. Add 100 grams of white onion, the garlic cloves, bay leaf, and black peppercorns.
3Cover the beef eye completely with water. Season generously with salt.
