1Rinse the dried chickpeas thoroughly and place them in a large bowl. Cover them with plenty of cold water and let them soak for at least 8-12 hours, or overnight.
2After soaking, drain the dried chickpeas and rinse them again. Place them in a large pot, cover with fresh cold water, and bring to a boil. Reduce heat and simmer gently for 60-90 minutes, or until the chickpeas are tender but still firm. Drain and set aside.
3While the chickpeas are simmering, finely chop the fresh rosemary leaves and thinly slice the garlic cloves.
