1In a small bowl, dissolve the fresh yeast and granulated sugar in 100g of the lukewarm Water. Let it sit for 5-10 minutes until foamy.
2In a large mixing bowl, combine the 00 flour and 10g of fine sea salt. Create a well in the center.
3Pour the activated fresh yeast mixture, the remaining 200g of lukewarm Water, and 50g of Extra-virgin olive oil into the well.
