1Thoroughly clean the Gori fish, remove any bones, and slice it very thinly against the grain. Place the sliced Gori fish in a large mixing bowl.
2Prepare the vegetables: julienne the Cucumber, thinly slice the White onion, thinly slice the Green chili, and finely chop the Perilla leaves. Add these prepared vegetables to the bowl with the Gori fish.
3In a separate small bowl, combine the Gochujang, Gochugaru, Soy sauce, Rice vinegar, Sugar, Minced garlic, and Sesame oil. Mix well until a smooth, uniform paste forms.
