1Wash the Glutinous rice thoroughly until the water runs clear. Soak the Glutinous rice in clean water for at least 4 hours, or preferably overnight.
2Drain the soaked Glutinous rice and steam it in a steamer for about 40 minutes, or until fully cooked and translucent. Spread the steamed Glutinous rice on a clean tray or large plate to cool completely to room temperature (around 25°C).
3Peel the Fresh chestnuts and steam them until very soft, about 30 minutes. Mash the steamed Fresh chestnuts into a smooth paste. Allow the mashed Fresh chestnuts to cool completely to room temperature.
