1Thoroughly wash the Hallabong. Peel 250g of Hallabong, removing any white pith, and slice the flesh into thin rounds. Set aside 50g of Hallabong for garnish, slicing it into thin rounds as well.
2In a small saucepan, combine the 250g of sliced Hallabong, Granulated sugar, and Water.
3Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the Granulated sugar is fully dissolved and the Hallabong softens slightly, about 5-7 minutes. Do not boil vigorously.
