1In a large bowl, combine All-purpose flour, 150g Water, and 3g Salt. Mix until a shaggy dough forms, then knead for 5-7 minutes until smooth. Cover and let the dough rest for at least 30 minutes.
2Finely chop the Napa cabbage. Place it in a bowl, sprinkle with 5g Salt, and let sit for 15 minutes to draw out moisture. Squeeze out excess water thoroughly from the Napa cabbage.
3Finely chop the Scallions and mince the Ginger.
