1Rinse the short-grain rice thoroughly under cold water until the water runs clear. Soak the short-grain rice in fresh water for at least 30 minutes, then drain well.
2Gently clean the fresh pine mushrooms with a damp cloth to remove any dirt, being careful not to wash away their natural aroma. Trim any tough ends and slice the fresh pine mushrooms thinly.
3In a medium-sized pot, heat the toasted sesame oil over medium heat. Add the sliced fresh pine mushrooms and sauté for about 2 minutes until they release their fragrance.
