1Rinse 250 grams of Dried chickpeas thoroughly. Place them in a large bowl, cover with plenty of cold water, and let them soak for 12-18 hours.
2After soaking, drain the Dried chickpeas and rinse them again. Transfer them to a large pot, cover with fresh cold water by at least 5 centimeters, and bring to a boil. Reduce heat, cover, and simmer for 90-120 minutes, or until the Dried chickpeas are very tender. Drain and set aside.
