1. Heat Coconut oil in a large pot or kadai over medium heat. Add Onions and sauté until translucent and lightly golden.

2. Add Ginger-garlic paste, Green chili, and Curry leaves. Sauté for 2-3 minutes until fragrant.

3. Stir in Turmeric powder, Coriander powder, Red chili powder, Black pepper powder, and Garam masala. Cook the spices for 1 minute, stirring constantly, until aromatic.
