1Peel the Lotus root and slice it into thin, 2-3mm thick rounds or half-rounds. Immediately soak the sliced Lotus root in a bowl of cold water for 5-10 minutes to prevent discoloration and remove excess starch. Drain well.
2Julienne the Carrot into thin strips, approximately 3-4 cm long.
3Remove the stem from the Dried red chili pepper and slice it into thin rounds, discarding the seeds.
