1Prepare the cabbage: Remove any tough outer leaves from the Cabbage. Tear the Cabbage into bite-sized pieces by hand. Wash the hand-torn Cabbage thoroughly and drain very well, ensuring it is as dry as possible.
2Prepare aromatics: Peel and thinly slice the Garlic. Peel and julienne the Ginger. Snip the Dried chilies into 1-inch pieces, shaking out most of the seeds.
3Prepare sauce: In a small bowl, combine the Light soy sauce, Chinkiang vinegar, Shaoxing wine, and Sugar. Stir until the Sugar dissolves.
