1Gently rinse the Shirako under cold running water to remove any impurities. Be very careful as Shirako is delicate.
2In a small saucepan, combine Dashi stock and Sake. Bring the liquid to a gentle simmer over medium heat.
3Carefully add the rinsed Shirako to the simmering liquid. Poach for approximately 30-60 seconds, or until the Shirako turns opaque and is just cooked through. Do not overcook.
