1Rinse the dried Shrimp roe under cold water, then soak in 50 grams of warm water for 15 minutes to rehydrate. Drain and set aside, reserving the soaking liquid if desired for extra flavor.
2Slice the pre-soaked Sea cucumber into 1 cm thick pieces. Blanch the Sea cucumber in boiling water for 2 minutes, then drain thoroughly.
3Peel and thinly slice the Ginger. Mince the Garlic. Separate the white and green parts of the Scallion. Slice the white parts into 2 cm lengths and finely chop the green parts for garnish.
