1Finely chop the dark chocolate. In a heatproof bowl set over a pot of simmering water (bain-marie), melt the dark chocolate and unsalted butter together, stirring until smooth. Remove from heat and let cool slightly.
2In a separate large bowl, whisk the large eggs and granulated sugar together until pale and creamy.
3Gradually add the slightly cooled chocolate and butter mixture to the egg and sugar mixture, stirring continuously until well combined.
