1Rinse the Whole chicken thoroughly under cold running water. Remove any giblets from the cavity.
2Peel the Carrots and Yellow onion. Wash the Celery stalks. Cut the Carrots, Celery stalks, and Yellow onion into large, rustic chunks.
3Place the Whole chicken in a large, heavy-bottomed stockpot. Arrange the chopped Carrots, Celery stalks, and Yellow onion around the chicken.
